The sweet potato salad

Fashion Foods. You might not have heard that term yet however in the past years we have all seen new foods that never existed in our diets before.

Who would have known about quinoa, goji berries, coconut yoghurt, acaii powder and matcha? People eat them however sometimes they don’t even know why. Here is a simple explanation of two fashion foods that you can recreate as a healthy dish in your house. Below you will see an all time favorite recipe that is very easy to make and full of good healthiness!

What is quinoa and why is it good for you?

As Bbc Good Food stated ‘with twice the protein content of rice or barley, quinoa is also a very good source of calcium, magnesium and manganese. It also possesses good levels of several B vitamins, vitamin E and dietary fibre.’ Quinoa is one of the only plant-based foods that is considered to be a full protein. Some health benefits also include anti-inflammatory, anti-oxidants and gluten free. This new discovery is worth having a look, as it is a great addition to a healthy diet.

Sweet potatoes

Sweet potatoes are extremely delicious and they are one of the best root vegetables to eat as they are very high in vitamin B6 and Vitamin C. Sweet potatoes contain iron which help support the immune system. The root is also a good source of potassium and most importantly they do not give the body sugar spikes as the sugar is slowly released in the body therefore giving you energy throughout the day.

Ingredients:

 1 sweet potato

 0.5 butternut squash

1 teaspoon of cinnamon

200 grams edamame beans

100 grams quinoa

100 grams rucola

25 grams pomegranate seeds

2 tablespoons of olive oil

1 lemon

10 grams of basil

Salt to taste

 Directions

This salad is usually best done when you have some sweet potato and butternut squash cooked. As you eat the salad cold you can simply prepare these things prior with the quinoa and then assemble it whenever you are feeling hungry.

Cut your sweet potato and butternut squash into squares. Drizzle olive oil and cinnamon on them and put them in the oven for 30 minutes at 180 degrees.

Whilst you are waiting for the sweet potato and butternut squash to cook simply wash your quinoa and put it in a pot with double the amount of water. Turn the heat up until the quinoa starts to sizzle and then reduce it, wait 15 minutes and the quinoa will be cooked perfectly.

Steam your edamame beans for about 10 minutes or boil them for 5 minutes in water.

Remember that you need to assemble the salad when it is cold because it will become mushy. To assemble it is very easy. Simply put your sweet potatoes, roasted butternut squash, rucola, pomegranate seeds and edamame beans together.

Chop up basil really finely and add the lemon and olive oil. This will be your vinaigrette. Mix up the vinaigrette and add it to the salad and mix very well. Add salt depending on how you like it.
